Cordon Bleu di Melanzane

Today's dish is a cordon bleu, the famous chicken steak with ham and cheese. There is one beautiful retelling, where instead of using chicken eggplant. This dish is often prepared frying the eggplants, but this is going to be a "light" version backed in the oven instead.






Ingredients


1 large round eggplant
200 grams of fresh ricotta
100 grams of ham
1 egg
Flour
Breadcrumbs
Oil
Salt
Thyme

Elaboration


Cut the eggplant into regular slices and grill them . Alternatively, heat slices for 4 minutes in the microwave. Be careful not to break the individual slices, because the recipe does not succeed well. In fact, we need to slices not too thin, but smooth and perfectly intact.


Now proceed as follows: salt lightly a slice of  eggplant, cover with ricotta, add a pinch of thyme, then continue with the thinly cut ham. Salted another slice of eggplant, and close it with the cordon bleu.

When you have prepared all the eggplant in this way, beat an egg and prepared in three different plates flour, egg and breadcrumbs. Dip the eggplant in the flour, then very quickly in the egg, then in bread crumbs.

Put the eggplant in a baking dish, sprinkle with a little olive oil and bake at 200 ° C for 20 minutes.

Serve after the eggplant rest for a couple of minutes.
